New Recipe from Gonzales resident Terri Louque Richard’s Cajun Cookbook!

Q:  What made you decide to compose the cookbook?

My passion for cooking starting at a young age. By the time I was a teenager I was cooking in the kitchen with my Mom. She was a very good cook. My children also love to cook and ask me all the time how to cook this and that. They are the reason I wrote my cookbook!
I found a website online and used them to put it together and publish it. All of the recipes are mine. I have a few recipes that are similar to friends or family but done in my own style of cooking.

Chocolate Chip Cookie Pie

12 chocolate chip cookies, crumbled
1/2 stick butter, melted
1 small box milk chocolate pudding
1 small box dark chocolate pudding
3 cups milk
1 small container cool whip
1/3 cup chocolate sundae syrup

Crush cookies in a ziplock bag.
Take 3/4 of cookie crumbs in a bowl, add butter and mix well.
Cover bottom of deep pie plate with cookie crumbs.
Put in freezer until it gets firm.
Whip milk chocolate pudding with 1 1/2 cups milk.
Add one cup of cool whip and blend together well.
Fill pie shell half way with pudding mixture.
Whip dark chocolate pudding with the rest of milk and spread over the other pudding mixture.
Top with the rest of cool whip.
Sprinkle the rest of cookie crumbs on top of cool whip.
Drizzle syrup over cool whip and crushed cookies.
Put in refrigerator until firm. (2-3 hours)
